Description
This is a super quick and easy salmon stir fry for any time of day.
Ingredients

Salmon
- 4 oz of salmon (even though wild salmon is supposedly better for you, I really prefer the taste and texture of a farmed Wester Ross Salmon)
- 1/4 tsp extra virgin olive oil
- Sea Salt and Pepper
Stir-Fry
- 1/2 tsp sesame oil
- 1 small clove of garlic, grated
- 1/4 tsp freshly grated ginger
- 1 cup fresh spinach (I use spinach and kale mix)
- 1/3 cup cooked quinoa
- 1/8 –1/4 tsp Tamari
Instructions
- Preheat Broiler (Or Preheat Oven to 450 degrees).
- Rub olive oil on skin of salmon and season with salt and pepper.
- Add olive oil to a pan on high heat.
- Sear the salmon skin side down first. Salmon skin should sizzle. Let cook on high for about 3-4 minutes.
- Flip. Cook on low heat for about 2 minutes. You still want to see the middle of the salmon raw as shown in the picture below.
- Transfer salmon to tin foil and put in Broiler for 3-4 minutes. Let cool.
- Add sesame oil, garlic and ginger to pan with leftover salmon juices. They will barely have to cook since the pan is already hot.
- Add in spinach, quinoa and Tamari. Cook for about a minute or until spinach is slightly wilted.
- Put on plate, top with salmon and serve.
