Super Fast Salmon Stir-Fry

Salmon is absolutely delectable when cooked to the right temperature.  Unfortunately, so many restaurants over cook it. This method is tried and true, giving you that crispy skin, and moist flakey layers of fish. In this super fast salmon stir-fry I add a little sesame oil, Tamari, garlic and ginger to the spinach and quinoa, giving it a pop of flavor that goes nicely with the salmon. I want to note, this isn’t going to knock your socks off, most likely. I put it on here because when I’m trying to slim down a bit, it’s super fast, tasty and easy.

I can prepare this meal in a flash on a busy day. I usually have cooked quinoa prepped and ready to go in the fridge. All that’s left to do is sear the salmon, put in the oven, grate the garlic and ginger into the pan with the sesame oil, quinoa and spinach, and I’m on a roll!

Super Fast Salmon Stir-Fry

  • Author: Victoria
  • Total Time: 20 minutes

Description

This is a super quick and easy salmon stir fry for any time of day.

Ingredients

Scale

Salmon

  • 4 oz of salmon (even though wild salmon is supposedly better for you, I really prefer the taste and texture of a farmed Wester Ross Salmon)
  • 1/4 tsp extra virgin olive oil
  • Sea Salt and Pepper
Stir-Fry
  • 1/2 tsp sesame oil
  • 1 small clove of garlic, grated
  • 1/4 tsp freshly grated ginger
  • 1 cup fresh spinach (I use spinach and kale mix)
  • 1/3 cup cooked quinoa
  • 1/81/4 tsp Tamari

Instructions

  1. Preheat Broiler (Or Preheat Oven to 450 degrees).
  2. Rub olive oil on skin of salmon and season with salt and pepper.
  3. Add olive oil to a pan on high heat.
  4. Sear the salmon skin side down first. Salmon skin should sizzle. Let cook on high for about 3-4 minutes.
  5. Flip. Cook on low heat for about 2 minutes. You still want to see the middle of the salmon raw as shown in the picture below.
  6. Transfer salmon to tin foil and put in Broiler for 3-4 minutes. Let cool.
  7. Add sesame oil, garlic and ginger to pan with leftover salmon juices. They will barely have to cook since the pan is already hot.
  8. Add in spinach, quinoa and Tamari. Cook for about a minute or until spinach is slightly wilted.
  9. Put on plate, top with salmon and serve.
  10. Enjoy!
