Charcoal-Grilled Lamb Chops Over Greek Green Bean Salad

Since mid-May I have been using my Weber charcoal grill quite frequently. I am, and always will be, a charcoal griller. Once you have tasted the flavor that charcoal gives to anything, it is really difficult to be satisfied with the results of a standard gas grill. In my opinion, lamb takes on a whole new personality when cooked over charcoal. I personally like the fact that the lamb chops “seem” less fatty due to the charring of the fat into a crisp. During the summer, I also like to lighten things up, and serve grilled lamb chops with different salads. Here, I have paired them with a Greek inspired Green Bean Salad, mixed with a home-made Greek Dressing, cherry tomatoes, and fresh Feta from the market.

Charcoal-Grilled Lamb Chops over Greek Green Bean Salad

I love the flavor of lamb chops on the grill, especially paired with a fresh, unique salad. 


Ingredients

Scale

Dressing (Makes a lot. Just use a little to lightly dress, and add more if necessary) 

  • 1 tsp. Dijon mustard  
  • 3 tablespoons red wine vinegar 
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. dried basil 
  • 1 tsp. dried oregano 
  • Salt and Pepper to taste 
  • 1/2 cup good quality, Extra virgin olive oil 

Salad 

  • 32 oz fresh green beans 
  • Bowl of ice water 
  • 2 cups cherry tomatoes sliced in half lengthwise 
  • 1/41/2 cup fresh feta cheese crumbled 

Lamb chops

  • 12 lamb chops 
  • Salt and Pepper 
  • Olive oil 
  • Charcoal grill

Instructions

Dressing 

  1. Whisk together Dijon, vinegar, onion powder, garlic powder, basil, oregano, and salt and pepper. 
  2. Slowly whisk in olive oil. 
  3. Let sit in container for 30 minutes prior to serving. 

Salad 

  1. Bring large pot of water to a boil. 
  2. Add in green beans and cook for 2 minutes. 
  3. Take out and immediately put in bowl of ice water. 

Lamb chops 

  1. Salt and pepper the night before, or at least an hour before cooking. 
  2. Brush with olive oil. 
  3. Place lamb chops on grill, (usually takes about 4 minutes per side) 

Assembly 

  1. Mix together green beans, tomatoes and dressing. Just add a little bit of dressing, and add more to taste. 
  2. Lightly fold in feta cheese. 
  3. Salt and pepper to taste. 
  4. Serve placing lamb chops on top of salad. 
  5. Enjoy!
